не выводится help по echo

$ man echo

echo [OPTION]... [STRING]...

--help display this help and exit

потому что так ты вызываешь встроенную в шелл команду echo

[(21:14)(100%)(0):~ ] /bin/echo --help
Usage: /bin/echo [OPTION]... [STRING]...
Echo the STRING(s) to standard output.

  -n             do not output the trailing newline
  -e             enable interpretation of backslash escapes
  -E             disable interpretation of backslash escapes (default)
      --help     display this help and exit
      --version  output version information and exit
